The last two days I have had a house guest. It was one of my oldest friends, Amanda, who really is the perfect person to have stay with you. She’s entertaining, relaxed, gracious, and helpful. We had a wonderful time reminiscing and laughing. Particularly at the videos of the recent batch of farmers for the reality show “Farmer Wants A Wife”, which this year features someone from our hometown. I’ve also known her so long she is basically family.
When I have guests I like to really look after them. I become very nurturing and ply people with cups of tea and food. I love it. They love it. We all love it.
So today I thought I would make something for lunch that was a little bit fun, a little bit easy, and a little bit different. I have had savoury muffins before, but they’ve always been really disappointing. They’ve been bland and usually lacking in the ingredients folded into the batter. When I decided to bake savoury muffins, I decided I would do it right.
I decided to make two different flavours just in case one of them didn’t taste good, but as fate would have it they were both AMAZING. The first lot were semi-dried tomato, olive, feta, basil, oregano, and parmesan. I don’t think I’ve ever tasted anything with olives, feta, and sun dried tomatoes that has been great. The second batch was ham, cheese, and spinach. It was just as yummy. I made a little platter with cream cheese and avocado. I also didn’t want to waste the left over ham and spinach, so onto the platter they too went.
So thus the most successful lunch of all time occurred. Jessica loved them. Amanda loved them. I loved them. They were also gluten free for poor old Jessica. So basically everyone kicked a goal.
